The Chukar is a handmade fixed blade from Christian of Lishen Knives in Bristol, Tennessee. It shares its name with an upland game bird, and it's a lean, light slicer that suits small game and fish as well as everyday cutting.
The 3.75" AEB-L blade is ground from thin 0.090" stock, so it slices with very little drag. That makes it a good fit for cleaning birds, processing small game, and food prep at camp. AEB-L is a fine-grained stainless steel that takes a very keen edge, stands up to moisture, and is easy to touch up in the field.
The knife is 8" overall but weighs only 3.5 oz. It has enough blade and handle for real work and is light enough to carry all day. The handle gives you a full grip without adding bulk.
